Russell Bailie started roasting in Belfast in 1993. Head roaster Stephen Houston works a Probat machine, sourcing 90% of green coffee from origin with over 70% through direct trade. Great Taste Awards include two Gold Stars for Silvio Espresso in 2014.
Bailies is Northern Ireland's only approved La Marzocco supplier and exclusive distributor for Kees van der Westen across NI and the Republic. They run Northern Ireland's first SCA-accredited training campus alongside a dedicated coffee lab. Staff member Sarah represented at the World Barista Championship in Melbourne.
