Dominic Rich, who studied art, and Eva Kostalidou, a former fashion photographer with eight years behind the bar, opened it in May 2012 and made the benches, shelves and bar themselves. Square Mile's Red Brick runs through a Synesso Cyncra, with bread from E5 Bakehouse and salad grown in Homerton.
The hut is one narrow room on Brooksby's Walk, running front to back to the bar at the rear. A wooden ladder beside the counter climbs to a mezzanine loft.
