Nichola Gensler and Martin Hardiman met at a roller disco party, then founded this bakery in 2010. They were among the first producers at Spa Terminus in Bermondsey, making sourdough and pastries with pure butter puff pastry. The brand has since expanded to Primrose Hill, Pimlico and Waterloo.
A curved corrugated steel roof arches over the open bakery at the back, where bakers work at wire shelving racked with loaves of sourdough. At the front, orange and yellow-painted stools line a counter built around a central pillar, behind full-height glass onto the street.
