Kirby Sinclair, Wesley Cusick, and Ed Cutcliffe started the roastery in 2013, and Cutcliffe still runs its sister company in Sydney. The first London shop opened in 2017, the second in the City in 2019.
Beans come from South and Central America, East Africa, and Southeast Asia through direct trade relationships. Each lot is roasted two ways, one for milk drinks and one for black coffee.
