Roland Horne left a luxury aquarium consultancy to open the first shop in 2014, in a 19th-century watch house where men once guarded a churchyard. Branches outside London now include Bath, New York, and Abu Dhabi.

The Maltby Street roastery runs a refurbished 1959 Probat UG22 bought from Bonanza in Berlin. Head roaster Nikol Novotna is a Q Arabica Grader and SCA Sensory Judge. Beans come from Ethiopia's Bensa highlands, Dongka farm in Yunnan, and Brazil.

At this shop

The shop occupies the ground floor of Foggo Associates' 'Can of Ham' building on St Mary Axe, its glass front angled into the tower's base. A 12-metre curved steel counter, arched at each end, runs past the bakery case toward an open staircase. Seating continues onto a terrace at the front.
