Jose, Omar, and Alejandro founded Ineffable in Seville in 2017 after working with specialty coffee in Cape Town, Istanbul, and the UK. They started as a reaction to Spain's Torrefacto tradition of adding sugar during roasting.
They organised the first Andalucia AeroPress Championship in 2018, repeated in 2019 with 34 competitors, the most in Spain. In 2024 they won best specialty coffee roaster in Spain.
