Five London coffee houses named after a John le Carré spy.

Abdelrahman Fathalla, who had worked at private equity advisory firm Campbell Lutyens, opened the first in March 2020, just as the pandemic began, and built a following on takeaway.

The coffee list is single origins from ten countries, including Costa Rica, Papua New Guinea, and Kenya, with single origin meaning a cooperative or small region rather than a whole country. The 2022 London Coffee Festival placed the brand third for Most Notable New Café.

Guillam sits in Smithson Tower on St James's Street, its windows framed by red-painted arches that look onto the red-brick buildings opposite. A black-and-white wave-pattern floor runs to a long bar, under exposed black ducts and red steel beams.
