Henry Ayers and Edward Parkes started it in 2014, inspired by London's original coffee houses. The hat names nod to Southwark's hat-making heritage.
A roastery at Maryland in Stratford has its own training school. The company went into administration in January 2024 and was bought that year by Origins 1450, the group behind Qima Coffee.
